Paella Mixta

Recipe provided by Don Quijote Restaurant

Ingredients
½ cup olive oil
1 red bell pepper, chopped and seeded
1 medium onion, chopped
½ cup chopped parsley
3 garlic cloves, minced
6 saffron threads, chopped
1 boneless, skinless chicken breast, cut in chunks
1 Spanish chorizo cut into 1-inch pieces
20 shrimp, peeled
4 mussels
4 clams
1 cup white wine
1 teaspoon salt
2 liters chicken broth
1 ½ cups white rice


Directions
In large paella pan, heat olive oil with red pepper, onion, parsley. Then add the minced garlic and chopped saffron to pan. After these are slightly cooked, add the chicken, chorizo, shrimp, mussels and clams to pan. Cook everything for about 5 minutes. Then add the rice and salt and mix everything for about 3 minutes. Finally, add the chicken broth and wine and let simmer at low heat for 20 to 30 minutes or until rice is cooked.

Makes  2 servings
